Dal, Batti ( puffed dough dumplings),Churma

Dal Batti is very popular food in rajasthan.Rajasthani food is incomplete without the mention of the famous Dal-Baati Churma.Irrespective of the method of cooking technique, batti is always served by dipping it in ghee accompanied with daal and churma.It is very delicious food and easy to make.If you want to eat this tasty delicious dish you should lock your diet fear in a room and enjoy.As you must have come to know by now that it is rich in Ghee.The more u add ghee ...the tastier it will be.
Ingredients for batti:
4 cups wheat flour

Salt o taste

1/2 tsp Ajiwain(Carom seeds)

4 tablespoon melted Ghee

Luke warm water

Method:
1.Knead the dough mixing all the above ingredients.

2.Keep in mind that the dough should not be soft,Batti needs little bit harder dough then chapatti dough ,so that they don't melt and fell in oven.

3.Once the dough is ready,divide the dough in equal parts in the size of big lemons.

4.Pre heat oven at 400F.Now place the batti on a cooking sheet or you can keep them directly on the middle rack of oven for about 20-25 min.

5.Keep an eye on oven n keep changing side so that you will bake it from all sides evenly.

6.Once the Batti's are golden brown you can bring them out and with a kitchen towel break them and put them in a melted ghee bowl. Serve hot.

Ingredients for Churma:

2 cups wheat flour

4 tablespoon melted ghee.

Luke warm water
1 cup granulated sugar

1 cup chopped dry fruits such as almonds, cashew

1 tablespoon crystal sugar.

1-1/2 cups melted ghee (as you like)
Method:

1.Knead the dough hard just like batti's.make thick roti and bake it on tawa at medium heat or you can repeat the process of batti's.

2.Once the batti's are ready,cool them and break them in pieces with hand.

3.In a mixi ,make the powder of the churma batti's.

4.Check that no big piece of batti left.

5.Now mix sugar with hand as per taste.At least i think you should add 3/4-1 cup sugar.Add melted ghee.

6.Add dry fruits ,crystal sugar and mix it well.

Ingredients for Daal:

Moong daal (lentil)

Channa Daal(lentil)

Salt to taste

Red chili powder

Turmeric

Cumin seeds

Coriander powder

Whole red chili

1 medium size onion

Chopped cilantro

Fresh 4 Curry leaves

Ghee/oil

2 Cloves

4 flakes garlic chopped finely

A pinch of asafoetida (hing)

1 big tomato

1 green chili

2 Whole black pepper

Water

Method:

1.Mix both Dal and wash them and keep them soaked for about about half an hour.

2.Pressure cook the daal with Salt,Curry leaves ,Turmeric till cooked for smooth consistency.

3.Now Heat oil/ghee oil a pan

4.Add Cloves,black pepper garlic red chili,asafoetida ,cumin seed one at a time.

5.Fry onions and green chili till golden brown,add tomatoes and cook for 5 min.Mix Red chili powder,coriander powder in little water and add to pan and cook till oil comes on top.(3 min)

6.Add daal to the masala.

7.Stir the daal and cook it for about 5-6 min.Taste the daal for salt and chili.If you need more you can add now and again cook for a while.

Garnish the daal with coriander leaves and slit green chillies. Dip hot (baati) dumplings in the daal while eating.

Add lemon juice to daal(optional)
