Elbow Macaroni Salad

Ingredients:
1 cup Elbows Macaroni

1/2 cup light sour cream

1/4 cup low-fat mayonnaise

1/4 cup chopped fresh parsley

1/2 tablespoon lemon juice
Salt to taste

Ground black Pepper to taste
1/4 cup chopped green onion

1/4 cup cucumber

1/2-inch 1/4 cup broccoli floret tops
1/4 cup carrot, chopped/grated

Method:

1.Prepare pasta according to package directions. Rinse under cold water and drain well.
2.Mix together sour cream, mayonnaise, parsley, lemon juice, salt and pepper. Combine dressing with vegetables.
3.Add pasta and toss gently with other ingredients until well coated.

4. Refrigerate at least one hour prior to serving.

A great traditional pasta salad perfect for summer! Keep the salad cold by placing the salad bowl inside a larger bowl filled with ice .
