Potato with fresh Dill leaves

Dill or Suva (Hindi name) is a very fragrant herb.The soft, feathery leaves are a rich source of iron and are added to flavour many recipes. A very popular vegetable in Maharashtra are using Dill.

Ingredients:

2 -3 big potato
1 bunch fresh Dill leaves
2 garlic cloves
Oil
Turmeric powder
Red chili powder
1 Green chili chopped finely
Salt
1/2 teaspoon Cumin seeds

Method:

1.Wash and chop dill. Dice potatoes and rinse with water, drain and set aside.

2.Heat oil in a pan.Add cumin seeds and garlic cloves chopped finely;saute till aromatic.

3.Add potato and green chill to it and give a stir.
4.Add chopped Dill leaves and cook for 5-7 min.

5.Add salt and turmeric.

6.Cook for about 5 more min.Keep tossing vegetable as potato stick to bottom if not stirred.

7.When potato are tender and just cooked add red chili powder and mix well.

These potatoes look really good.

Dill has such a lovely flavour - they don't seem to have it in stock at the supermarkets round our way very regularly (such a shame)
