Ingredients:

Wonton Wrappers
Cabbage Copped Finely 1/4 cup
Carrots grated finely 1/4 cup
Chat masala to taste
Salt to taste
Red chili powder/Ground black pepper(As you wish,to taste)
1 tablespoon cooking oil
Cooking Spry
Water
Boiled and mashed baby Spinach 1 cup
Paneer/Cottage cheese grated 1 cup
Oil for deep fry

Method:

1.In a large bowl mix cabbage,carrots,Squeezed Spinach and Paneer.Mix all the veggies together.

2.Add all dry Ingredients (Salt,Red chili,Chat masala) together.

3.Wet the Wonton Wrappers using a damp Kitchen towel for 5-8 min.

4.Now use a spoon to do filling.Just put enough filling on the Wrappers that the filling does not come out( almost 1/2 tsp).

5.Take brush the edges with water to seal them in any desired shape.

6.Deep fry them till golden brown.Let them sit for a while on Tissue.

And finally eat the mouth watering delicious snack .

Weight watchers Banana Bread

Ingredients:

3 ripe bananas, mashed
1 3/4 cups flour
2 eggs
1 1/2 cups sugar
1 teaspoon baking soda
1 teaspoon
1/4 cup milk
1tbsp Vanilla Extract
1/2 cup vegetable oil
1/4-1/2 cup walnuts,Almonds cut into small pieces or any other nut (optional)

Method:

1. Preheat the oven to 325 degrees F.
2. In a bowl, combine the mashed bananas, eggs, oil, milk, sugar and vanilla.
3. Add the flour and baking soda.
4. Mix well to combine for about 2-3 minutes.
5. Pour the mixture into a greased loaf pan and bake in the oven for about 40 min or till the toothpick comes out dry.

Raw Mango Pickle

Ingredients:
1 large Raw Mango
Red chili powder to taste
Fenugreek seeds powder 3/4 tsp
Turmeric powder 1/2 tsp
Salt to taste
Sesame oil 4-5 tbsp

Method:
1.First of all wash the mango and grate it as we do for carrot halwa.

2.Heat oil in heavy bottom pan.

3.Add grated mango to the oil.Cook for about 4-5 min.

4.Now add fenugreek seed powder.....and mix well.Now add all spices and mix.

5.Cook till mango becomes soft and tender.

Cabbage Pokora/ vegetable fritters

Ingredients:

Chopped cabbage 2 cups
Besan/chick pea flour 1 cup
Rice flour 1/2 cup
1 onion sliced length wise
1 green chillies finely chopped
Fresh green Coriander chopped
Water
Salt to taste
Red chili powder
Hing a pinch
1/4 tsp cumin seeds
Chat masala according to taste/Garam masala(optional)
Oil for frying

Method:

1.In a large bow mix all the above ingredients except water and oil .

2.Slowly add water, as required to make batter tight.

3.Take a frying pan heat oil on medium heat.

4.Once the oil gets heated take a spoon and drop 3-4 spoons of the batter into the oil at different place till the pan is filled with pakora's

5.Once the pokora are fried...ie... they are Golden brown from all sides,remove them on a paper towel.

Serve hot with ketchup or any chutney with hot tea .

Enjoy tasty crunchy pokora.

Broccoli onion paratha,Flat bread

Ingredients:

Broccoli florets 4 cups.
1 medium size onion
Oil 2 tsp for filling
Oil/Ghee for brushing
Salt to taste
Red chili powder
Ground Cumin powder
Chat masala

Method:

1.Cut Broccoli florets and boil them till soft and tender,Squeeze all water and chop finely.

2.Finely chop an onion.

3.Heat some oil in a pan over medium heat, sprinkling some whole cumin seeds till they crack and sauté the onion with half of the salt until it becomes golden brown.Finally add chopped broccoli.Add all spices red chili powder,remaining salt roasted cumin powder ans chat masala.

4.Sauté until the broccoli is just cooked and all water if present is evaporated.

5.Taking a little over a golf ball size dough, roll out the dough into a circle.

6.Put the cooled mixture of broccoli in the centre of the circle.
7.Bring all the edges in the center and with the fingers press it.Now Sprinkle some flour on the rolling top and spread the paratha.

8.On a hot griddle or tawa or pan, Cook the parantha.Brush ghee /oil on both the sides,cook till golden brown from both the sides.

9. Serve them hot with some yogurt, spicy pickle.

Gujiya

Ingredients:
Ghee / Oil to frying
2 cups Maida /All purpose flour
Oil / Ghee for dough
Khoya or Ricotta cheese
1/2 tsp green Cardamom Powder
Handfull of Chopped fried cashew
1 1/2 cup Dried Coconut (shredded)
Granulated Sugar to taste... almost 1 cup
Water
Gujiya mould

Method:

1.Sieve the flour.

2.Mix 3 tablespoons of oil with the maida.Add some water and knead.

3.Keep adding water as required and knead into a soft but tight dough.

4.Set aside and cover with a damp cloth.

5.Mash the khoya and fry it in a kadhai in 2 tbsp ghee in deep pan till light brown in color or if
you are using Ricotta cheese cook it till all water evaporates and cheese becomes thick.Do not stop stiring while cooking cheese.It may stick to bottom

6.Once the mixture is cool , add sugar and cardamom powder into the cooked mixture and mix well. Add coconut powder and fried cashews .
7.Fry for 2 minutes and remove from the heat. Allow it to cool.

8.Divide the dough into small balls and roll each ball into a small round of 4 inch diameter.
9.Fill half the round with the khoya mixture, fold it and seal the round, twisting the edges inwards.
10.Take care that the filling does not come out. Prepare all the gujiyas and spread on a cloth.

11.For using moulds, place the rolled dough ball in a greased gujiya mould and fill a tbsp of filling mixture on one side. Moisten the edges of the round and fold one side of the mould over the other. Remove the excess edges and re use the remaining dough.

12.Heat ghee in a kadhai and deep fry the gujiyas on medium flame.. When golden brown in colour, drain and remove.

Mashed potato in yummy yogurt

Mashed potato with curd is very popular during vrat.As no grain is allowed to eat during these days.
Ingredients:

2 Cups yogurt
2 Potatoes
Ground Black Pepper as per taste
1 tsp Roasted Cumin Powder
Black Salt to Taste
Coriander Leaves Chopped Finely

Method:
1.Beat yogurt in a bowl.Boil, peel the outer skin of potatoes and mash them.

2.Add ,mashed potato in beaten yogurt and mix well.

3.If it is too thick, add little milk and mix it.

4. Add black salt, cumin powder and black pepper powder, mix well.
Garnish with coriander leaves.

5. Place in the refrigerator for 1-2 hours.

6.Serve cold.

Pea and Mushroom Pulav

Ingredients:

2 cups Basmati rice
2 cups Button mushroom or sliced mushroom
2 tbsp oil
1 cup cubed carrots
2 black cardamom pods
2 cinnamon sticks
3 garlic cloves,sliced
Salt to taste
Pea
Cumin seeds
1 tomato
2 whole cloves
Turmeric (optional)
Red chili powder
2 1/4 cup water

Method:

1.Wash the rice and drain the water.

2.In a medium heavy base pan,heat oil and add the spices,garlic and half of the salt.

3.Add tomatoes chopped finely and then turmeric.

4.After 3-4 min add mushrooms with peas and stir fry till its is half cooked.Add red chili powder. and cook for 2 min.

5.Drain the rice water and add it to the pan and give it a quick mix without breaking rice grains.

6.Add the water 2 1/4 cup and transfer it to rice cooker and remaining salt, cook for about 21 min.If you want to cook on stove,cover the pan on medium heat and continue cook for 15 - 20 min...approx.

Sweet corn with Cauliflower

Ingredients:

2 tbsp oil
4 curry leaves
1/4 tsp mustard seeds or cumin seeds
2 medium onion,diced
Red chili powder to taste
Turmeric powder 1/8 tsp
1/2 of small cauliflower,cut florets
1 cup frozen sweetcorn kernels
Salt to taste
Method:

1.Heat the oil in a pan and stir fry the curry leaves and the cumin seeds or mustard seeds.
2.Add the onion and fry them till golden brown.

3.Add the cauliflower and cook till soft and tender.Add the sweetcorn and turmeric and cook till it becomes soft.
4.Finally add salt and chili to taste.

Naan

Ingredients:
2 tsp dry active yeast
4 tsp warm milk
2 tsp sugar
4 cups all purpose flour
1 tsp baking powder
Salt to taste
2/3 cup milk
2/3 cup yogurt,beaten
1 egg beaten (optional)
1 tsp vegetable oil
Oil for greasing
Chopped coriander to sprinkle (optional)

Method:

1.Pre heat oven to 400F.

2.Mix the yeast in warm milk and sugar and leave it to become frothy.

3.Shift the flour ,baking soda,salt.Make well and fold in the yeast ,milk yogurt egg and oil.

4.Knead the dough well.Tightly cover the bowl and keep in a warm place until the dough double in size.(to check push figure in dough- it should spring back.)

5.Roll out the dough on a floured surface.
6.Make each naan in desired shape.(preferably slipper shaped)
7.Sprinkle with coriander leaves.

8.Place on lightly greased tray and bake for 10-15 min.

Onion Rings

Ingredients:

1 egg
1/4 cup vegetable oil
1 cup milk
1 cup flour
1/2 teaspoon salt
1 teaspoon baking powder
2 large sweet onions, sliced
1/2 cup flour (for coating onions)
oil (for frying)

Method:

1. Select firm, medium-sized red, white or brown onions. Peel off the outer papery skin. Turn the onion on its side and cut slices approximately 1/4 in/5 mm thick. Separate the slices.Mix egg, oil, and milk on low speed of mixer for 1 minute or by using hand.

2. Add dry ingredients and mix until smooth.

3. Coat onions in flour.
4. Dip in batter.

5. Fry in hot oil until desired shade of brown.
